Pea and potato croquettes are easy to make.
One of the main ingredients of this recipe are potatoes, which are an excellent expert of
potassium. On top of that, it contains proteins, salts, and vitamins, especially Vitamin C, carbohydrates, and water. A fun fact to know is that you shouldn’t put apples and potatoes in the same place, because it changes their flavor.

● 2 large potatoes cooked with skin
● 2 tablespoons of flour
● 2 eggs
● 2 tablespoons of shredded cheese
● 1 onion, finely chopped
● 2 tablespoons of oil
● 2 tablespoons of water
● 1 cup of frozen Maizalito split peas
● Salt and Pepper

Preparation

First we have to cook the potatoes, so the croquettes are easier to make. We are going to cook them with skin, so they can acquire a better taste and absorb less water. A good way to know if the potatoes cooked is by poking them with a fork. If it slides easily all the way to the center, it means they are done.

Once they are done, we can peel and smash them making a puree.

The first thing we have to do is mix the mashed potatoes with the flour, the eggs and the shredded cheese. Season to taste with salt, nutmeg and pepper. Then we fry the onion with the oil and water. When it’s done, we mix this sofrito with the mashed potatoes and the peas.

When do we add the peas?
Well, first we have to cook them. If they are frozen, we can add water in a pot and boil it.
Once it is boiling we can add the peas, and wait until it boils again, so we can take them
out and drain them. After that, we have to smash the peas and combine it with the
mashed potatoes. Once everything is mixed together, we can proceed to assemble and cook them…

We have to wait a few minutes, so the dough can cool off. Once it cools off, we can begin
to assemble the croquettes and coat them with egg and breadcrumbs. Then we fry the croquette with a fair amount of oil on a small pot (with high edges if possible) in medium
heat (not boiling).

We cook the croquettes until golden brown, remove and drain them on absorbent paper.
Another option is to cook them in the oven. Add oil to a baking sheet and bake the croquettes at 180° for 20 minutes. Flip them halfway so they cook evenly.
